    Debbie McEachern: Persimmon Cookies

    Here is my mom's famous Persimmon cookies. We used to have a grove of Persimmon trees, so my mom learned to bake many things with them, but these were our favorites.

    Ingredients:

    1/2 Cup shortening
    1 Cup sugar
    2 Cups sifted flour
    1 egg
    1/2 tsp soda
    1/2 tsp baking powder
    1/4 tsp salt
    1/2 tsp ground cloves
    1/2 tsp nutmeg
    1/2 tsp cinnamon
    1 Cup ground walnuts
    1 Cup raisins
    1 Cup Persimmon Pulp

    Method:
    Cream shortening and sugar. Add dry ingredients and raisins. Combine pulp and eggs. Drop on lightly greased cookie sheet. Bake 350 for 8-10 minutes.

    Persimmon Cookies

    1 cup persimmon pulp
    1 teaspoon baking soda
    1 cup sugar
    1/2 cup shortening or margarine
    1 egg
    2 cup flour
    1 teaspoon cinnamon
    1/2 teaspoon salt
    1/2 teaspoon nutmeg
    1/2 teaspoon cloves
    1 cup nuts
    1 cup raisins

    Mix pulp and baking soda together and set aside. Cream sugar and shortening then beat in the egg to the persimmon mixture. Sift flour,cinnamon, clove, nutmeg, and salt then add it to the mixture. Fold in raisins and nuts. Then drop spoonfuls on greased cookie sheet. Bake at 375degrees for 12 to 15 minutes.

    Persimmon Oatmeal Cookies

    1 cup pulp
    1 teaspoon baking soda
    1 1/2 cup sugar
    3/4 cup shorting or oleo
    2 eggs
    1 teaspoon vanilla
    1 1/2 cup flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoon nutmeg
    1/2 teaspoon cloves
    1 teaspoon cinnamon
    1 1/2 cup rolled oats
    1/2 cup coconut
    1/2 cup nuts

    Mix pulp and baking soda together and set aside. Cream sugar and shortening. Beat in eggs and add to pulp mixture. Sift flour, cinnamon,clove, salt and nutmeg to the mixture. Fold in oats, coconut and nuts,drop on cookie sheet and bake at 375 degrees for 12 to 15 minutes.
