My church, NewSong in San Dimas Ca, published one of those cherished community cookbooks to raise money for women's ministries. I'm very impressed and my friend, Bobbi, actually managed to take on this project pretty much all by herself. Well done! The book is called Breaking Bread: Rejoicing in His Bounty (as the title of this post suggests), has 350 recipes and handy dividers are included in the price which happens to be a mere $10. You'll have to be local though because we don't have a stamp/mailing budget. Go figure. Here's a yummy recipe from the book . . .
LEMON CHICKEN
prep: 20 min cook: 4 1/4 hours
servings: 6
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
6 boneless skinless chicken breast halves (6 oz each)
2 teaspoons chicken bouillon granules
1/4 cup boiling water
3 tablespoons lemon juice
1-1/2 teaspoon minced garlic
1-1/2 cups (12 ounces) sour cream
2 teaspoons minced fresh parsley
Combine the oregano, seasoned salt and pepper; rub over chicken. Place in 3 quart slow cooker (mine is bigger and it worked fine). In a small bowl, dissolve bouillon in boiling water. Stir in lemon juice and garlic. Pour over chicken. Cover & cook on low for 4 hours or until meat thermometer reads 170.
Remove chicken and keep warm. Stir in sour cream and parsley; cover and
cook for 15 minutes or until heated through. Serve with chicken and
sauce over noodles.
