    Recipes From Annette

    Annette's Sneaky Healthy Brownies

    1/4 c unsalted butter
    1/4 c unsweetened applesauce
    1/4 c of cocoa
    2 eggs
    1 c of brown sugar
    scant 3/4 c of whole wheat flour or less
    1/2 c chopped walnuts or you can use whatever nuts you love
    a pinch of salt

    Melt butter and cocoa together and add applesauce. Stir until mixture melts and let cool.
    In medium bowl, beat the eggs until frothy. Then add brown sugar, flour, nuts, and salt but don't stir yet. Then pour the cocoa mixture over and stir together, and scrap into an 8 x 8 inch pan. Bake at 350 deg F for about 30 minutes of at 325 in a convectional oven. When it pulls away from the sides, it is ready.

    Cut into 25 squares. You can ice it if you like, but since this is a sneaky healthy recipe I would not recommend it. And the funny thing no one will know the difference except you.



    Chili For Two

    Half a lb of ground chicken or extra lean beef
    1/2 a 28 oz can of plum tomatoes
    1/4 each of red and green peppers
    1/4 cup of celery (optional)
    1 to two Tbsp of chili powder
    1 to 2 jalapeno peppers, seeded if you do not like hot
    chili flakes to taste.
    3 cups of cooked kidney beans or pinto or a mixture of both.
    Tbsp or so of coriander leaves chopped up
    a tsp or so of cinamon
    a dash of salt
    pepper to taste
    a dash of salt
    pepper to taste
    a tsp or so of cumin
    tsp of oregano
    1 medium sized onion or 1/4 of large Sweet Spanish onion
    Can also add a tsp or so of lime juice.

    Brown the meat in olive oil or what oil you prefer. Add the chopped onions.
    then add the rest of the ingredients, making sure to crush the tomatoes - a potato masher or ricer is good for this. Add beans, using part of the liquid. Simmer until reduced.
    You can also add beef or chicken broth if it is too thick. This will serve two hungry men or one hungry man and two women.
